Spiced Pumpkin Porridge
Hi Hi Hi It's getting chillier by the day and there is nothing than a heartwarming bowl of porridge to keep you warm and make you feel all snuggly inside. And it being pumpkin season and all, I have about 3 pumpkins staring at me so this had to be done.So So good
Let's get cooking, shall we?
Serves 1
Ingredients
3 wedges of a Munchkin Pumpkin ( peeled,chopped and marinate with coconut oil five spice)
1 Cup Rolled Oats
1 Cup Coconut Milk
1 tsp Crushed Black Pepper
1 tsp Cinnamon Powder
1 tsp Cardamom Powder
1 Star Anise
1 tsp Aduna Baobab powder
Fruits of your choice to decorate
For the Blueberry Sauce
Handful Blueberries
2-3 Cloves
Organic Maple Syrup
2 tsps Water
Method
- Pre-heat the oven at 250 degrees for about 5 mins
- Add the diced pumpkin in an oven dish and cover with foil
- Leave to bake for about 10 mins
- Now add the oats, the spices, baobab powder and coconut milk in a pan and mix well
- Cook the oats for about 2-3 minutes on medium heat stirring continuously so it doesn't stick to the pan and get gloopy
- Once the pumpkin is backed, mash it all up with a fork or blender
- Mix in with the oats and let it rest
Blueberry Sauce
- Add the handful of bluebs into a pan
- Add the water, cloves and maple syrup
- Let it blanch for about 2-3 minutes on medium heat
- Once cooked and slightly gloopy, get the sauce into a strainer and smush it through to make a smooth pulp
Serve with your favourite toppings and eat with a big smile on your face.
