Green Bulgar Pinto Bean with Red Pepper Coconut Chutney
Oh hey! I really can eat this everyday. For breakfast, lunch and dinner. Yes, obsessed. It's heartwarming and so filling. My mom used to make green peas pilau every weekend and it would fill the home with the most amazing frangrance ever. we would jump out of bed just in time for lunch ha ha. Mind you we were 15 or 16 then and loved to sleep in till noon. Good Times!
Bulgar wheat is one of my favourite alternatives to Rice. I discovered this gem on one of our trips to a Turkish Cash & Carry about 2 or so years ago. Gave it a little go with a simple salad and was completely hooked. Now it is a pantry essential.
And my kid loves it too! Which is always a bonus right?! So here is how it went down. This revipe will serve 2 peeps.
What you will need:
For the Bulgar Wheat
1 Cup Fresh Spinach
1 Cup Fresh Mint
1 Cup Fresh Parsley
Thumb Size Ginger
2-3 Garlic Cloves
1 Red Onion Finely Diced
1 Cup Pinto Beans
1 Cup Bulgar Wheat
1 Spoon Coconut Oil
1/2 Cup Water
1 tspn Turmeric Powder
1 tspn Garam Masala
1 tspn Chilli Powder
1 tspn Amchur Powder ( It's a powder made with unripe green dried mangoes, it's got a fruity and tangy taste and adds so much depth to this dish)
For The Pepper Coconut Chutney
1 Finely Chopped Red Pepper
1 Cup Decicated Coconut
1 Green Chilli
1 Clove Garlic
1/2 Cup Extra Virgin Olive Oil
1/2 cup Fresh Lime Juice
Salt & Pepper to taste.
Let's cook that Bulgar!!
In a blender dump the spinach, mint, parsley, ginger,garlic and water. Blend and leave aside.
In a pan on medium heat, chuck in that coconut oil and stir fry the chopped onions for a minute before adding in the Turmeric Powder, Garam Masala, Chilli Powder and Amchur Powder.
Stir the ingredients for 1 minute and add the Pinto Beans into the mix, make sure you keep stirring so the spice mixture doesn't burn and stick to the pan.
Add the Bulgar Wheat and give it a good mix so all the bulgar is coated well with the spices evenly.
The next step, add the blended mixture into the pan and mix well. If needed add 1/2 cup of water. Close the plan and turn the heat down to low.
This should be ready in 7 mins or so. Garnish with some fresh chillies and parsley.
For The Pepper Chutney
Take all the ingredients, chuck them into a blender and whizz away babes. Et Voila chutney ready.
Serve with your choice of salad. Make sure you take your time devouring this and be mindful of every little feeling that come with every little bite!
