Sweet & Spicy Gingerbread Porridge

Namaste everyone. Before I even get into the recipe, massive massive apologies for not have posted this on my blog. Do not ask me why I thought I had already shared this with you. Literally cannot even think of a reason other than I simply forgot and I want to apologise for it.

But here I was making this for the second time and I headed to the blog for reference and realised I hadn't clicked on the "Publish" tab. How ridiculous of me! Anyway I'm tucking into this as I post this recipe because I have just ran home with the child in soaking rain. The kid was all nice and cosy in the warmest prams and wellies whilst mother was Usain Bolting it home in the rain. You know what happened next don't you? As soon as we got in, locked the door behind us, the sun was out in full glory. Have to laugh at these things right.

This was the perfect bowl of sunshine to warm us up. Hope you give this one a go and love it as much as we do.

Ingredients:

1 tsp Aduna Baobab Powder 1 cup steel cut oats 1 tsp ground cinnamon 1 tsp ground nutmeg 1 tsp ground ginger 1 tsp ground cardamom 1 tsp grated ginger 1 1/2 cup coconut milk Handful diced apple 1/2 chopped plantain 1 tsp maple syrup

To serve (optional): Sprinkle Aduna Super-Cacao Powder Handful fresh blueberries Apple slices Fresh thyme

Method:

  1. Mix all the dry ingredients together in a pan. Add in the coconut milk, apple, plantain and maple syrup.
  2. Mix well and transfer into a pressure cooker. Cook on a medium heat for about 10 minutes. Once you hear 2 whistles take off the heat and let it cool down.
  3. Serve with your favourite toppings.

The perfect bowl of comfort food and just sooooooo good.
