The Green Chutney I Swear By
A green chutney sandwich takes me back to when I was 8 and my best friends mom would make her a sandwich with thinly sliced cucumber, tomatoes and a good amount of green chutney generously spread over a toastie. We always swapped lunches at least once a week or whenever this was on her menu ha ha.
That little sandwich meant everything to me. It meant waking up with exciting anticipation after green chutney sandwich marathon dreams the previous night. It was the best.
For years I have been trying to master that exact taste because not once in my teenage years did it ever occur to me about asking my bff's mom how exactly she made it. So many accidents later, I am now so happy that every time a sandwich is made, it takes me back to hot summer days in Dubai at the school ground with a bunch of girls swapping lunch. Ahhh goals.
What you need:
1 Bunch Corriander
Thumb size Ginger
3-4 Green Chillies
Pink Salt
Handful Pistaschios
Juice of 1 Lemon
1-2 tspns of Water
What you do:
Put it all in a blender et Voila babes! You got your green chutney.
Enjoy this baby in a sandwich, a dip, mix it in with some lentils or just eat it on its own.
