Overnight Beet Oats
Happy Happy Day Universe. So we've been having some breakfast issues lately. My son, Juno is partial to Wheetabix or a slice of toast and PB. Which I see absolutely nothing wrong with. But when it comes to eating his fruits, he will run like a missile. Not going to lie, its been beyond stressful. So I had to figure out a way to make breakfast fun and vibrant.
An experiment that went down a treat. I am constantly thinking of ways to get as much nutrition in him as possible. If I know his tummy is happy after a a hearty breakfast filled with goodness; I'm happy and so is he! That amounts to hours of going wild in the playground and park ha ha.
Breakfast is his favourite time of the day which is so perfect because it really is the most important meal of the day. Its about that good energy first thing in the morning for mind, body and soul. Skipping breakfast is so not the one!
Believe me there was some fussing around when he saw this, but once he got to the bottom layer of it and saw a purple gooey mess he tasted it and we were off. Winning and uhh that PHEW moment.
So here is how it went down...
What you need:
1 Cup Organic Oats
1 Cup Coconut Rice Milk ( Coconut Dream Rice Milk)
Pinch Cinnamon Powder
Pinch Cardamom Powder
1/2 Beetroot
Handful Blueberries
1 tsp Coconut Oil (Coconut Merchant or Coco Samui Coconut Oil )
Homemade Nutella (Recipe will be on the blog soon)
Toppings of your choice babes.
What to do:
- In a blender chuck in the beets, blueberries and Coconut Dream Rice Milk to make a smoothie
- In a bowl get the oats, cinnamon powder, cardamom powder and coconut sugar mixed in well before adding the coconut oil.
- Add in the smoothie and mix well. Soak it overnight
- Add your favourite toppings
Et Voila, now your oats will look purple! So visually pleasing ha ha
My toppings were Grapefruit, Blueberries, Strawberries, Sunflower seeds, Banana and Nutella balls :). Whoop Whoop Happy happy mama bear.
